The whole team at Casa Gregorio took wonderfuly good care of us. Greg has paid a tremendous amount of attention to every detail of the experience. The buildings have been beautifully restored with lots of original stone and woodwork. Everything is kept immaculately clean. The food is delicious and never-ending. The excursions were very well planned. If you love food and Italy, then I highly recommend this trip!

Wonderful staff and accommodations! The cooking classes were so easy to follow. I think I can make this food at home!
Peter and Gregory were wonderful hosts. Davida, Massimo, Giuseppe,Fabrizio, Sara and the rest of the staff were very kind and helpful. Walking was a challenge for me, I was fresh out of PT for a knee replacement, but the sites were breathtaking and my need to see everything outweighed my walking challenge.
The town is just what you would expect from an Italian village.
A must do! Don’t miss this experience.

Truly an unforgettable experience from the accommodations, food (fresh & organic)wine, cooking classes & excursions. Gregory & staff make sure they exceed your expectations with 5-star accommodations & customer service. Our first day in Italy started out with their private driver (if your lucky enough to get Guisseppe Sp?) who was courteous & helpful in getting our luggage & ourselves to the charming hillside town after arriving into Rome. Upon arrival, you are greeted by Gregory & staff with a refreshing sparkling wine & tour of the property with its breathtaking views. Take in these views from multiple rooms & outside balconies throughout the villa. Eating authentic & delicious food is never ending & an art at Casa Gregorio, thanks to our chef/instructor Valerio who was both charming & humorous throughout our classes each night. Come prepared to be serenaded & captivated by Mossimo with his beautiful tenor voice for the evening entertainment. Gregory, Peter, Mossimo & their entire staff are well organized, always at your disposal to answer any questions making sure the guest is taken care of and receiving the best possible experience during your stay. You are definitely treated like family & friend at Casa Gregorio. The villa is tastefully decorated throughout with treasures of Italy. Each en-suite is private, clean, inviting & comfortable. One of the best experiences we have had cooking & relaxing in a charming Italian town without the hustle & bustle of a city but close enough to visit by train.

This culinary venue is located in a quaint mountain village. Casa Gregorio provides hands on cooking with staff that go out of their way to provide clients with outstanding service. The accommodations were exceptional and the cooking was fun and tasty and a real learning experience. Everything is well-organized and even the excursions we took were wonderful. The views are beautiful -- almost everywhere you look. I highly recommend Casa Gregorio!

Just what you think an Italian hilltop town should look like. Wandering the streets and being welcomed by the locals was so far removed from “touristy” places. The staff at the Casa is truly a family and they make cooking class informative and fun. All the meals we made were delicious ( and filling). The working kitchen is huge, and makes watching the cooking session easy. Peter and Gregorio are perfect hosts and tour guides, and so enthusiastic about their work. The story of la Mamma de Ciociara was new to us, the plaza dedicated to her tells a very moving part of WWII history.

My husband and I had a wonderful experience attending the Roman Countryside culinary class this March. The accommodations and entire palazzo were 5 stars all the way, charmingly, uniquely and professionally decorated and impeccably clean. Of course the setting in Castro dei Volsci was purely magical, a part of Italy we had never seen but were thrilled to visit. But the best part was the staff and cooking classes. From the moment we arrived we were greeted warmly by our host for the week Peter, and Mossimo. They made sure our entire stay was perfect in every way, with much attention to detail both at "home" and during our excursions. Chef Valerio was fabulous, excellent instruction, a good variety of recipes, fun and engaging throughout the week. And may I add there was an abundance of food and wine, so diet before coming! The cooking class assistants were also gems, so kind and charming, I wish I remembered all their names to give them a special tribute. Finally, our baristas and drivers Giuseppe, Pepe and Andreas were a pleasure and attentive to our needs. Truly an experience we are grateful for with memories (and recipes) to last a lifetime.

This place is externally well run, the best staff, and plenty to eat and drink wine (sorry no beer). Our room was huge, well decorated and CLEAN.
The chef was funny and a great gal to be in the kitchen with.
For those men that don't want to cook, no worries, sit back and drink wine.

The scenery is breath taking. You will see how the real Italian in some villages live and operate.

Cass Gregorio is a five star hotel that provides cooking lessons. The staff are friendly and knowledgeable and generate a learning experience that's fun.
Besides the fabulous food,a real highlight is going into the country side and meeting the locals and observing how they make cheese, olive oil, sausages, wine,etc. These outings give you a better understanding of Italians than viewing all the iconic tourist attractions. I recommend this highly and can't wait to return.
